What is Desiccated Coconut?
Desiccated Coconut is finely grated, dried, and unsweetened coconut meat that retains the natural flavor and aroma of fresh coconuts. It is a versatile ingredient widely used in:
- Bakery products (cakes, cookies, bread)
- Confectionery (chocolate coatings, bars, desserts)
- Cereal and snack mixes
- Savory dishes and curries
At PT. High Coconut Indonesia, we produce both Fine Grade and Medium Grade Of High Fat Desiccated Coconut & Extra Fine Grade Of Low Fat Desiccated Coconut to meet the needs of different industries.
Our Production Process
We believe that quality starts from the source. That’s why we work closely with coconut farmers across Indonesia to ensure only the best raw materials are selected. Our process includes:
- De-Husking
This process removes the outer husk of the coconut, leaving only the hard shell. It can be done manually or with a specialized de-husking machine. - De-Watering
The coconut water is drained from the fruit. This water is usually discarded or utilized for other purposes, depending on production needs. - Deshelling
This step removes the hard shell from the coconut meat, typically using a shell-breaking machine. - Paring to remove brwon skin
The thin brown skin (testa) is peeled off from the coconut meat using a knife or special paring machine, leaving clean white coconut meat. - Washing
The white coconut meat is washed with clean or filtered water to remove dirt and remaining skin. - Grinding
The coconut meat is ground or grated into fine or coarse particles, depending on the desired grade (fine, medium or extra fine). - Blanching & Drying
Blanching: The grated coconut is immersed in hot water or steam to kill bacteria and prevent discoloration.
Drying: The coconut is dried using controlled hot air until it reaches a low moisture content (around 3%). - Grading
The dried coconut is sieved and classified according to particle size (fine, medium, or special cuts) to meet market standards - Inspection
The desiccated coconut is checked visually and through quality tests (such as moisture content, cleanliness, and microbiology) to ensure it meets standards. - Packing
The desiccated coconut is packed into bags, sacks, or vacuum-sealed packaging to preserve quality during storage and shipping. - Ready for Shipment
The packaged product is ready to be loaded into containers and shipped to customers or market destinations.
